Bryndza Podhalańska PDO – Traditional Sheep's Cheese

Bryndza Podhalańska is a traditional, spreadable sheep's milk cheese that has been produced for centuries in the Podhale region. In 2007 it was awarded PDO (Protected Designation of Origin) status, making it one of the first Polish regional products to be protected by the European Union. Bryndza is made exclusively from the milk of mountain sheep and Wallachian sheep grazed on the high-altitude pastures of Podhale at a minimum elevation of 550 m above sea level. The milk must be unpasteurised in order to preserve the natural bacterial microflora characteristic of this region. The production process begins with the preparation of a base cheese using traditional methods with natural rennet. The fresh cheese is then ripened for 3–7 days in a cool place, after which it is broken, salted and crumbled in specialised machines or by hand in traditional wooden troughs. Maturation lasts a minimum of 14 days. The finished bryndza has a lard-like consistency that spreads easily, with a colour ranging from white to cream. The flavour is distinctive – salty with a gentle sharpness and a slight tartness. The aroma is naturally sheepy and clean, with no off-notes. Fat content in dry matter is a minimum of 45%, and salt content is 3.5–5%. Bryndza is an inseparable part of Podhale cuisine – used in traditional "haluški", "moskola", and as a spread on bread. It is rich in protein, calcium, phosphorus, and vitamins B2, B12 and A. Geographical area: the Tatry, Nowy Targ and Sucha (partial) districts of the Lesser Poland (Małopolska) voivodeship. Dunajec Gorge Rafting – Traditional Wooden Rafts

Since 1934, visitors from around the world have been admiring the dramatic limestone cliffs of the Pieniny from the deck of traditional wooden rafts steered by professional raftsmen. **ABOUT THE ATTRACTION:** The Dunajec Gorge is a picturesque canyon through which the Dunajec River flows between sheer cliffs rising up to 300 metres.
